RECIPE: Chicken Tikka Masala

¼ cup plain yoghurt (for marinade)
5 tbsp Patak’s Tikka Masala Curry Paste
8 oz diced chicken breast
1 medium onion, diced
1 tbsp vegetable oil
½ cup of water
½ cup fresh or canned tomatoes
¼ cup cream or plain yoghurt (optional)
1. Combine yoghurt and Patak’s Tikka Masala Paste, add chicken. Marinate in refrigerator for 1 hr or overnight for a fuller flavor.
2. Gently sauté onions until golden, add chicken and sauté until sealed. Add chopped tomatoes and water; simmer for 25 minutes until chicken is cooked through.
3. Stir in cream or yoghurt just before serving (optional). Serve with hot, cooked rice.
